extra

I went to go up little from  my place,

Demi Chef


I made sure that his name is known by everyone again.

I am too embarrassed to say,

I didn`t know that YOSHI got a star of Michelin Guide.

I feel honor to work at such a great restaurant again.





In this Monday,We went to hang out together because the restaurant were closed.

We are enjoying with Rose wine from his hometown.

I`m feeling happy every time while I`m hanging out together with my friends

in everywhere no matter where I am.

He is a good greek guy who are working around Europe,

and now we are working together.

But he will be gone on this the end of August

because his girlfriend is missing him in London.

I`m going to miss you too,man.



Anyways,

I made sure of my position clearly in my job place,

My position is "Demi Chef de Partie"

In the French kitchen,The position are classified obviously like

(From beginning)Apprentice Chef, Commis Chef, Demi Chef, 

Chef de Partie, Sous Chef, Head Chef 

The meaning is "Half of Chef".

I do my best to become a "Chef"!

P.S.
The marriage ceremony of the Prince of Monaco will be held soon.
The world top VIP will be getting together in Monaco then.
I can see them and flag of Monaco everywhere now!

Cultural differences

I`ve noticed one thing about cultural difference

in between Eastern and Western about food.

Most of western people doesn`t like put "black" into mouth

because of their culture has image that black is the symbol color of evil.

We use to use that "black" as seaweed sheets for rolls,

But sometimes that is hard to accept for them.

That`s the reason why western people created "California Rolls" which the rolls inside out.

I`ve noticed that because one day when I was cooking fried rice,

I added little more soy sauce for finishing it,

But the chef got angry of that"Trop noir!"(It`s too much black! )

I was thinking that cause why he said that,

I`ve reached this cultural difference that I`ve noticed.


ANYWAYS,


I went to the bar which located beside Palace of Monaco in break time for having some beer with my co-worker,Dante.
He is Mexican who are coming here as trainee from Mexican cuisine association .

He speaks Spanish,English,French,so It seems he won`t get any problem

no matter where he goes about oral communication.

I could feel good motivation from him,

So that we had great time,I hope we could go for drinking sometimes.

We walked the alley of palace on our way back.
the young guys were enjoying summer on beach.

Mediterranean  sea from small window,that`s perfect view that I want.

Nice

I went to Nice last my day off,It seems that beautiful summer had just begun.
People are hanging around beach,and enjoying their life.
The beach at night is also beautiful,
The moon illuminated the beach and ocean.
 I wish I could someone beside me.

I cooked pasta for my dinner at hotel.


I went to the market beside the beach next day.
They had lots of local food and souvenir. 

Cold beer and sunny beach made perfect matching.
The heritage is left since 2000years ago from Rome era.
This park are fulfilled with olive trees so I could feel real south of Europe.

I choose beef as main dish and he choose fish.

It was great time to enjoy my life in Europe,
This will become good motive for next week.

New Job


It took a week had past already since I got started my job in new kitchen,

I got first holiday today.

I feel that everything is going good with new great staffs.



I`m in charge of hot section and appetizer now and working with french staff.

90% of conversation is going french,sometimes I feel bug with miscommunication
but some staffs are able to talk little English,I don`t feel anxiety very much.


They create the finest masterpieces every day,so I feel honor of what I can join their team.










I`m living a room of hotel which I`m working (Restaurant is in the hotel),I also can use canteen of hotel,the staff meal is also great.




I suppose that I want to travel around in Europe as much as the time allows.
Well,Let`s leave for Nice first!

Day three.



We were called by manager of the hotel and we went to Police Dept to get the permission of work in Monaco at this morning.

The manager is very nice person (young woman)who had learned at university in Quebec for several years.
After we had some personal talk,We got the Police Dept.

To tell the truth,I got little bit nervous about getting long stay permission.

But everything was going smooth,so finally we could get proper working status in Monaco.

But it takes time to take procedure to make documents,She said that you won`t work here this weekend.  

Okay,sounds good to me!
Let`s go to Genova for sightseeing !(It takes 3hrs by train)

I`ll report it here when I`ll come up there!
